An English preparation cooked an a griddle, the batter consists of flour, milk, eggs, yeast & sugar.
Crumpets are popular in the UK, Ireland and Australia.
Its super simple, give it a try.

Ingredients


Method:
1. Combine the tepid water, yeast and sugar in a bowl and place aside for 15-20 minutes.
2.Once the yeast mixture has rested, combine the flour, salt in a mixing bowl.


3. Make a well in the centre, combine the eggs, milk and start mixing slowly with the help of a whisk.

4. Once the batter is well incorporated, add in the melted butter and stir.

5. Cover the bowl with a cling wrap or a tea towel and allow it to rest for about an hour-hour and a half in a warm place.
6. Once the batter has doubled volume, heat a griddle on medium flame. I have used small steel rings, this will help retain the shape as it cooks.


7. Grease the rings, and place them on the griddle. Gradually spoon the batter into the rings covering 3/4th the height of the ring.

8. Allow it to cook for about 3-4 minutes on each side, using a toothpick/tongs gradually lift the rings and continue cooking for a minute or two more.

9. Flip the crumpet over gradually and cook for about 3-4 minutes on the other side. You could cover the pan with a plate to ensure that the heat is trapped well within the pan.
10. Once cooked, serve them warm with a generous dollop of butter and preserve.
Alternatively you can slice them the next day, pop them in a toaster and serve them warm too.
