Triple chocolate chip cookie

This is a very delicate decadent cookie best had warm, you can make the dough in advance and a bake them as you need.



Ingredients




Method:



1. Combine the butter and sugar in a mixing bowl, using a paddle attachment start creaming this.



2. Once the butter and sugar is well incorporated. Gradually add the vanilla-eggs, scraping the sides of the bowl in regular intervals.Continue mixing until all the eggs have been well incorporated.



3.Melt the dark chocolate in the microwave, do not go more than 30 seconds at a stretch as the chocolate might burn. Make sure that the chocolate isn't too hot.


4. Add the warm melted dark chocolate to the egg mix and combine well.



5. Sieve the dry ingredients and add the chocolate callets to it and mix it.


6. Gradually add the dry ingredients to the egg mix and do not over mix it, just enough to bring it all together.



7. Scrape out the cookie dough, cover and rest for 10-15 minutes in the freezer or overnight in the refrigerator.


8. Pre heat the oven to 200 degrees centigrade, line a flat tray with grease proof paper.


9. Portion 25-30 grams of the cookie dough and roll them between the palms of your hand, ensuring you don't over work the cookie dough.


10. Place them on the baking tray leaving enough space between them.


11. Bake them for 8 minutes, take out the tray from the oven and place a few chocolate callets on the freshly baked cookies, the temperature of the cookie will just melt the chocolate and stick to it while its still hot.



12. Allow to cool, store in an air tight container, or like I mentioned earlier bake as and when you need. You can freeze the cookie dough for about a month if required too.
