Chocolate Chip Cookie

Who doesn't love the humble chocolate chip cookiešŖ
TIP:Using this recipe you can reduce the flour content (25%) and replace that amount with cocoa powder to make a double chocolate cookie to make it even more interesting.
Yield : Approximately 35 cookies of 25 gm each
Ingredients
All purpose flour 238gm
Baking soda 2.3gm
Salt 3gm
Dark brown sugar 134gm
Blackstrap molasses (Optional) 12gm
Castor sugar 104gm
Dark chocolate chopped (70%) 107gm
Chocolate chips 107gm
Unsalted butter (at room temperature) 167gm
Whole eggs 60gm
Method:
1. Preheat the oven to 160 degrees centigrade, prepare the baking tray with grease proof paper and place aside.
2. Sieve the flour, baking soda and add in the salt, chopped chocolate and chocolate chips. (If you are making the double chocolate cookie you can sieve the cocoa powder too).
3. Combine the molasses, castor sugar, brown sugar in a separate bowl.
4. In a medium sized bowl, cream the butter until fluffy on a low speed, add in the sugar mixture previously made and continue creaming for about 3-4 minutes.
5. Gradually add in the eggs one by one, continue creaming on low speed. Do not over whisk as it might curdle, also over mixing can aerate the mixture causing a good volume to the cookie but as it bakes it will collapse. Scrape the bottom of the bowl with a spatula to mix any parts which haven't combined homogenously. If you feel that the mixture is curdling stop and proceed to the next step, don't mix any further.
6.Now fold in the dry ingredients with a spatula to ensure everything has combined. Similarly scrap the sides and the bottom and mix evenly.
7. Place this mixture in the refrigerator for about an hour covered. If you find it soft refrigerate a little longer. You can freeze the remaining dough and use as when required so you just have to bake when you need them.
8.Portion the cookie dough to approximately 25-30gm each, roll them between your hands briefly. Do not over work them as they can get messy.
9.Place them on the tray (leave adequate space between the cookies as they expand while baking) lined with grease proof paper and bake for about 14-16 minutes till golden brown. Allow to cool before trying to take them off
