Tres Leches

A delicate milk cake from Mexico, consists of a light and fluffy cake soaked with three types of milk (Condensed milk, evaporated milk and heavy cream). This is how it gets its name, "tres" which means three types and "leches" which means milk.






Yields two bowls (21cmX15cm)


Ingredients


Butter unsalted 56gm

Caster sugar (A) 100gm

Caster sugar (B) 100gm

Vanilla extract 5ml

Egg yolks 3

Egg whites 3

Plain flour 125gm

Baking powder 5gm

Salt 2.5gm

Milk 118 gm


For soaking

Condensed milk 397gm

Evaporated milk 340gm

Heavy cream 30% 118gm

Vanilla extract 5ml


Finishing

Heavy cream 30% 400gm

Caster sugar 50gm

Vanilla extract 5ml

Cinnamon powder 2gm


Method:



1. Pre heat the oven to 170 degrees centigrade.


2.Seive the flour, baking powder, salt in a small bowl. Separate the egg white and yolks in separate bowls. Weigh both the sugars separately.



3.Cream the butter and sugar (A) until light and fluffy.



4. Gradually add the yolks and cream further until light and fluffy. Scrape the sides of the bowl and continue for a minute or so.


5. Combine the milk and dry ingredients alternatively one after the other in three intervals.

This is how the mixture should look, free from any lumps. Place aside.



6. In a separate dry bowl, start whisking the whites until light and foamy.




7. Once you see this foamy effect, gradually start to add the sugar (B) and continue whisking until stiff peaks.




8. Now fold the meringue into the egg mixture gradually with the help of a spatula.



9. Transfer the batter into a oven safe dish, usually the one in which you wish to serve.



10. Bake at 170 degrees centigrade for 15-20 minutes.Allow to cool.



11. In a separate bowl, combine the condensed milk, evaporated milk and cream. Stir well.


12. Make holes with the help of a fork and pour the mixture over. Let it absorb, ensure every corner of the cake is soaked. Store in the refrigerator for 2-3 hours.




13. Once chilled and fully absorbed, whip the cream with sugar and vanilla.


14. Pipe the cream over the cake or you may even use a spoon to layer it. Use a flat spatula to level the cream. Sprinkle a few pinches of cinnamon powder over and serve.
