An Indian bread originated in Maharashtra, India in 1850.
Traditionally served with a minced vegetable curry commonly called 'bhaji', the bread is cut in between buttered and lightly toasted. Its served with lime wedges and chopped onions.
The duo is referred to as 'Pav bhaji', which is a popular street food snack.

Ingredients
Bakers flour 400gm
Milk powder 21gm
Water 160gm
Egg 1
Fresh yeast 9gm
Salt 8gm
Sugar 24gm
Butter 60gm
Egg wash
Egg 1
Salt 1 pinch
Butter/oil for brushing
Method:

1.Pre-heat the oven to 190 degrees centigrade.
2. In a mixing bowl combine the flour, milk powder, egg, sugar, salt, yeast and butter.

3. Add the water gradually and continue mixing till the dough comes together.

4. Keep covered in a bowl for about 45 minutes, you will notice that the dough has doubled in size.
5. Gently press the dough with the palms, divide the dough. I portioned the dough to 30gm each. Using a weighing scale will ensure consistency in the dough. Tighten the dough by rolling on a flat surface.
6. On a light greased tray, place the dough leaving an inch gap. Allow to proof in a humid area.

7.Once you see that the dough has doubled and risen, brush the surface with egg wash and bake for about 12-15 minutes at 190 degrees centigrade until a nice golden colour is obtained.

8. Once out of the oven, using a brush lightly brush the pav with oil, this will give it a good shine and help it remain soft.
