Honey Comb

A sweet candy made with just three ingredients, give it a go.
Just be a bit careful while doing this around kids, the temperature of the sugar is quite high.

Ingredients
Caster sugar 150gm
Golden syrup 45gm
Baking soda 3gm
Oil (For spraying the cake tin)
Equipment
Grease proof paper
Medium sized saucepan(Slightly larger the better)
Whisk
Method:

1. Slightly brush the cake tin with oil, line it with grease proof paper.

2. In a medium sized saucepan, combine the sugar and golden syrup.

3. Start cooking the sugar and golden syrup on a low flame, do not keep mixing. Agitate the sauce pan and swirl it around to give it a mix.
4.Once you see that the mixture is coming together and the sugar has completely melted, gradually increase the flame.


5. Continue cooking until you see a nice amber colour with bubbles forming on its surface.

6.Now turn off the flame, add the baking soda at one go, using a whisk combine it evenly.
Immediately transfer it to the lined cake tin. Do not shift or move the cake tin for about 30-40 minutes.
7. You will see that the honey comb has risen quite a bit, but gradually starts to flatten as it cools down, it is perfectly alright. Once cool place it on a chopping board and break it to small pieces using a knife or even a fork.
