Berry blondie

A variation from the classical brownie which is usually made from dark chocolate or cocoa powder. A blondie recipe consists of white chocolate and almond meal. The texture is dense and gooey.
I have topped it with some frozen berries before baking, you can leave it as it without the berries if you wish so.

Ingredients
Butter unsalted 290gm
Caster sugar 260gm
Eggs 300gm
Vanilla extract 5ml
White chocolate chopped 220gm
Plain flour 165gm
Almond meal 260gm
Salt 2.5gm
Frozen/fresh berries 200gm

Method:
1. Pre-heat the oven to 170 degrees centigrade. Line a greased flat tray with grease proof paper.
2. Melt the butter and place aside.
3. In a seperate bowl whip up the eggs, sugar and vanilla extract till light and fluffy.


4. Combine the dry ingredients in a seperate bowl.
5. Fold the dry ingredients to the egg mix in 2-3 intervals.

6. Add the melted butter in 2-3 intervals gradually mixing to form a homogenous mix.

7. Transfer the mix to the flat tray, flatten it with a spatula. Top it with the berries and bake it for 35-45 minutes until a skewer comes out clean when pierced in the center.

8. Allow to cool, cut into squares and enjoy 😋
