Welsh cake

It originated from the country of Wales in Great Britain. These cakes are a cross between a cookie, scones and a pancake. They have the appearance of a cookie, ingredients similar to a scone but however cooked like a pancake on a griddle.
They were also referred to as "Welsh miner cakes", as Wales was once known for its agriculture and mining. Traditionally the lady of the house would prepare them for children to take to school, they were quite favoured with the miner husbands too as it was easy to slip into their pockets and reminisce while working deep down under as a sweet reminder of home.
Its easy to prepare as the best part is you don't need an oven and much fancy ingredients unlike other cakes.

Ingredients

Method:
1. Combine the salt along with the plain flour in a mixing bowl, add in the sugar and diced chilled butter.

2. Using your hands rub in the butter, sugar and flour between your hands slowly, the idea is to work the mix slowly and obtain a sandy texture.

3. Combine the sultanas to the flour, butter and sugar mix. Place aside.


4. Combine the milk and eggs together and add it to the dry ingredients gradually.

5. Gradually mix the ingredients moving from all corners.
6. Once the dough has come together, roll it in between two sheets of parchment paper and rest it in the refrigerator for about 20-25 minutes.

7. Using a cookie cutter slightly dredged in flour cut out pieces, and place aside.

8. Heat a griddle on medium flame, brush it slightly with some oil or butter.

9. Place the cakes on the griddle and adjust the flame to ensure the temperature is neither too high nor or low.

10. After about 3-4 minutes on one side turn them over and cook for another 3-4 minutes on the other side.


Serve warm with a dollop of whipped cream, jam and a hot cup of tea.
