Spiced Apple cake

This cake is a slightly dense fruity cake with a hint of cinnamon and nutmeg. Perfect with a scoop of vanilla ice cream. You can replace the apples with pears too.
Yield : 1 X (8" cake)

Ingredients
Whole eggs 2
Caster sugar 90gm
Vanilla 5gm
Butter unsalted melted 90gm
Plain flour 155gm
Baking powder 5gm
Salt 2.5gm
Cinnamon powder 5gm
Nutmeg powder 2.5gm
Walnut/Almond 60gm
Raisins 90gm
Apple diced 500gm
Icing sugar (For dusting)
Method :
Preheat the oven to 170 degree centigrade. Line an 8" cake tin with grease proof paper.


1. Combine the eggs, vanilla and the sugar in a mixing bowl. On a whisk attachment aerate this till it is light and fluffy.
2. Simultaneously melt the butter in the microwave oven and place aside.
3. Add the melted butter gradually mixing on a low speed.

4. Combine the dry ingredients together and add it gradually to the egg-butter mix, its best to go in three intervals rather than at once.

5. Once the dry ingredients have been incorporated, add in the diced apples and combine.

6. Pour the cake batter into the lined cake tin, bake it for about 45-50 minutes. Using a flat knife check the doneness. Allow it to cool on a wire rack.
7. Once cool, dust the top with icing sugar. You can serve it with ice cream or just some cream.
