Scones

An English delicacy, light and crumbly in texture. It consists of buttermilk, flour, butter and leavening agent like baking powder and lightly sweetened with sugar. A devonshire high tea, an elaborate tea offering consists of scones, jam & clotted cream served with tea. Often dainty cucumber and cream cheese sandwiches are also served.
I have used lime zest and raisins in this recipe, you can replace the lime zest with orange zest and the raisins with cranberries alternatively.

Make 12-14 Scones
Ingredients
Plain flour 200gm
Caster sugar 25gm
Baking powder 12gm
Salt 1.5gm
Lime zest 1
Butter unsalted chilled 50gm
Raisins 60gm
Cream 112gm
Honey 15gm
Whole eggs 25gm
Egg wash
Egg 1
Milk 20ml
Method
Pre-heat the oven to 190 degrees centigrade.
1. Combine the flour, baking powder, salt, sugar, lime zest in a mixing bowl. In a separate bowl combine the cream, eggs, honey.

2. Using a paddle attachment, combine the dry ingredients till it resembles a sandy texture and the butter has completely incorporated into the flour.


3. Change to a hook attachment, add the wet ingredients in the bowl and continue to mix.


4. Mix on a low speed, add in the raisins and mix by hand.
5.Rest the dough for 15-20 minutes covered.

6. Dust some flour on a table top, roll the dough to about 1.5 inch thickness, using a round cutter cut the dough and place it on a baking tray lined with grease proof paper.


7. Light brush the scones with the egg wash.

8. Bake at 190 degrees centigrade for 12-15 minutes.
9. Serve with sweetened whipped cream and jam.
